FOODIE ALERT! Cooks: this was fab. Cook spouses: this is X-mas present material.
{Spouses: "Tastefully Simple - Smoked Paprika & Garlic Dip Mix" (talk to Kay), AND a "Spoonula" re: Giada at Target.}
PINK RICE:
1 cup Basmati rice (I like HT- Natural Organic)
1 1/2 Tbs butter
small drizzle of vegetable oil
1 3/4 cup chicken broth
1 Tbs (heaping) TS - Paprika mix stuff
if you dare - more sweet &/or spicy paprika
Melt butter & veg oil (mix fats so they won't burn), add raw rice, cook slowly on med-low heat for about 8 minutes, stirring frequently. The point is to slightly "toast" the rice grains so they give off a nutty flavor. NO brown! Pour in the broth and stir in the "Tastefully Simple - Smoked Paprika & Garlic Dip Mix" and any extra paprika that you dare. Stir with your wonderfully useful Spoonula.
Cover. Bring to boil, stir and turn to low. Cook for 15 mins at low, stirring occasionally.
This is FABULOUS!!!!!!!
(I'm thinking 10 out of 10)
